Product Protection Comes First
Product protection comes first. If your refrigeration equipment is not holding safe temperatures, follow your food-safety plan immediately: record temperatures, limit door openings, move product to functioning alternate storage, and contact your health department if required. Restoring cooling does not make food that has been in the temperature danger zone (40°F–140°F for more than 2 hours) safe to serve.
Commercial refrigeration problems require fast action — both to protect your product and to prevent equipment damage. These guides walk you through safe owner-level checks. Food safety always comes first: when in doubt about product temperature, follow your food-safety procedures and do not rely on restoring cooling to make previously unsafe food safe.
